Food for Thought: Brunch menu

Brunch is a must for many on weekends, but it can put a dent in your wallet.
News 12's Natasha Geigel set out to find some delicious and healthy dishes for hosting brunch at home. She met up with chef Aliya LeeKong, who shared some recipes from her cookbook, "Exotic Table."
One of the dishes LeeKong makes is Shakshuka. It's a traditional North African breakfast dish that offers a rustic blend of onions, peppers, tomatoes and garlic, all cooked down until it becomes almost stew-like.
To drink, home-brunchers can try black plum and hibiscus sangria. It's made from unsweetened hibiscus tea with stewed black plums and a bit of sugar.
To top off the meal on a sweet note, try chia pudding parfait. Chia is a complete protein that's high in omega-3's. It absorbs liquids easily, so it becomes gelatinous simply by adding milk or almond milk to make a pudding. Topped with toasted nuts and berries, it makes a fantastic mid-morning treat.
