Organizers with Brooklyn Oyster week say they're giving back to the oceans by recycling oyster shells back into the waters off of New York.  

Master Mermellier Kevin Joseph founded New York Oyster Week to share delicious oysters and exclusive pairings with people throughout the city.

But he's giving back more than just the amazing and unique taste of oysters.

"We are bringing oysters back to the harbor; that, of course, cleans the water and builds back the reef that used to be here, which in return helps build the marine ecosystem back so other species can grow back here," Joseph says.

He and others are working to restore oysters to New York Harbor by recycling their leftover shells - sending them to the Billion Oyster Project.

Throughout Oyster Week, ecological education will be provided in Brooklyn, and Joseph says the impact these events are expected to make includes acres of reef, which could mean billions of gallons of water filtered every week.
