Chef's Quick Tip: Enfrijoladas

This week, Chef Ivan Romero from Puerto Vallarta Restaurants shows Tina Redwine how to make Enfrijoladas. 
Enfrijoladas
1 qt cooked black beans
1⁄4 cup water
1pc chipotle pepper in adobo sauce
1⁄2 tsp salt
Steak
Corn tortillas
Avocado
Radish
Red onion slices
Ranchero cheese
Blend all ingredients together to make the sauce Cook steak to the desired temperature then chop it Warm-up corn tortillas then roll steak in them Dress with black bean sauce
Garnish with avocado, red onion, radish slices, cheese, and Mexican sour cream.
