Chef Vinny of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Stuffed Lobster Tails.

INGREDIENTS:

2 ea. 4oz lobster tails

½ lb. crab meat (super lump)

20 ea. saltine crackers (crushed)

¼ cup mayonnaise

1 tsp. Dijon mustard

½ lb. shrimp (precooked and chopped)

1 tsp seafood seasoning

¼ cup red pepper (minced)

¼ cup celery (minced)

¼ cup scallions (Thinly sliced)

2 tbs. parsley (chopped)

2 tbs. lemon juice

DIRECTIONS:

1. In a small mixing bowl add mayo, Dijon mustard, lemon juice, celery, red pepper, parsley, and scallions.

2. Add the saltines and seafood seasoning.

3. Mix all ingredients until they are incorporated well.

4. Fold in the shrimp and crab meat being careful not to break up the crab pieces (You should be able to see the lumps of crab in the mix) and set aside.

5. Using a sharp knife carefully cut through the top of each lobster tail making sure not to go through bottom part of the shell.

6. Gently crack open the tail revealing the lobster meat. Using your finger pull the meat out of the shell leaving the back part of the tail attached and lay the meat atop the shell.

7. Top each shell with a generous portion of stuffing mix.

8. Cook at 425 deg. For 8 to 9 minutes.
