Food for Thought: Crockpot cooking
Cooking with the crockpot is an excellent way to serve up hearty, healthy meals even with limited time for cooking.
Lifestyle blogger Marla Meridith stopped by the News 12 studios with some time-saving tips for crockpot cooking.
She shared a recipe for a crockpot twist on a traditional enchilada, made using fresh veggies, spices and pantry items. She layers in the crockpot diced tomatoes and enchilada sauce with a saute of chickpeas, onions and diced green chili peppers. She adds in spices like cumin, garlic powder, salt and chili powder.
Some corn chips and sour cream are then layered in, or plain Greek yogurt can be used for those looking to keep it light. A layer of cheese is added next.
The slow cooker is then turned on for four to six hours, and the end result is a delicious meal ready to be topped with fresh avocado, cilantro and lime wedges. It's perfect for "Meatless Mondays," and can also be rolled up in corn tortillas and eaten like a soft taco.
