Fuhgeddaboudit Food: Steve's Authentic Key Lime Pie

A Red Hook bakery has been serving the same slice of pie for more than two decades.
At Steve’s Authentic Key Lime Pie they are masters at creating scrumptious, creamy and, most of all, authentic key lime pie.

"There are people that come here that have never had key lime pie or have had key lime pie and they dislike it - they hate it and then they try our pie and they love it,” says general manager Melanie Dessommes.

So what makes it so special? The secret is its simplicity. 

"It's fresh. It's just pure. Nothing added on. No chemicals, nothing,” says Victoria Tarpin, the owner's wife.

She says the juice is squeezed out of actual limes and not from a bottle, then blended with condensed milk, pasteurized egg yolk and chilled on top of a baked graham cracker crust. 

"It's got that little kick in the back of your mouth. It's not fake tasting."
Also, at Steve’s there's a zero waste philosophy, so the small pies that aren't sold get frozen and then dipped into dark chocolate to create the “swingle.” 
The swingle has become such a hit, at times it overshadows the original.
