Restaurants in Connecticut are preparing to reopen on May 20 with outdoor seating only, and Norwalk officials are considering closing down a road to let restaurants put tables on the street.
Ana Caballero, the manager of Aji 10 Latin Cuisine, says that it is "a lot of work" to prepare due to all the new rules.
"We have to figure out about our entrance because everything has to be one-way," she says.
The state has given restaurants eight pages of rules, including ones requiring face masks for servers and customers. Menus must be disposable, condiments can only be single-use, and there are no bars or food buffets allowed.
Norwalk Mayor Harry Rilling says the city is fast-tracking outdoor dining permits and is waiving all fees.
"They have to have enough space to allow people to pass by with 6-feet distance," he says. "That's why we're looking at some sidewalks or some parking areas that we can close to the public."
La Fortuna Restaurant in Stratford is planning for indoor dining possibly at June. The owners of Aji 10 Latin Cuisine says outdoor dining means they can only bring back half of their workers.
Police, health inspectors and zoning workers in Norwalk will be checking in on restaurants to make sure they follow the rules.
