Ingredients

  • 1 whole turkey
  • ½ lb. butter (softened)
  • ¼ lb. butter (softened)
  • 3 tbs. UG poultry seasoning
  • 1 lemon (cut in half)
  • 1 bulb garlic (cut in half)
  • 1 shallot (cut in half)
  • 2 sprigs of thyme
  • 2 sprigs of rosemary
  • 4 sprigs of sage
  • 4 tbs. salt

Directions

1. Place a the ½ lb. of butter in a bowl, add the poultry seasoning and mix until all are incorporated.
2. Place the turkey on a steady surface and start running your fingers underneath the skin starting above the open cavity. Continue until your entire hand is under the skin and the skin is separated from the meat.
3. Place the seasoned butter under the skin making sure to spread it out evenly.
4. Place the bird on a roasting pan and stuff the cavity with the lemon, garlic, shallot and herbs.
5. Using a paper towel pat the bird until its completely dry.
6. Rub the skin with the softened butter, sprinkle the entire bird with salt and cook at 350 degrees for 13 minutes per pound.
