A Trinidad and Tobago food vendor is serving up some sweet Caribbean delights at the West Indian Day Parade. Coconut currant rolls, sugar cakes and cassava pone were just a few of the special treats offered along the Eastern Parkway.
Currant rolls are a sweet bun that contains currants or raisins, while cassava pone is a Caribbean delicacy made from cassava and used fairly often. The pone is a sweet treat, and it is not a cake or a pudding, but somewhat in the middle.
The vendors also offered roti rolls, a Caribbean wrap with stewed curry goat and other spices.
